We love a good smoothie in our house, something that fills our bellies and comes together quickly when we're in a rush. I love this blueberry and cashew butter smoothie, its not too sweet and when I'm really busy, its a great breakfast on the go. The combination of blueberries and a little nuttiness from the cashews is delicious!

This smoothie can be enjoyed all year round, because the blueberries are frozen. Personally, I prefer smoothies in summer, when I crave cold drinks most.

Ingredients

- frozen blueberries - I love using frozen blueberries instead of fresh, they keep longer and I can access them all year round. Nothing annoys me more than beautiful berries that go mouldy the day after they're purchased, a sad waste
- cashew butter - nut butters have been popular for years, but cashew nut butter doesn't seem to get much attention. I love that its smooth and has a light nutty flavour
- Greek yoghurt - my favourite yoghurt, I always add a heaped tablespoon or two to all my smoothies, the protein is great for a morning smoothie
- honey - a little sweetness to balance out the other ingredients, maple syrup is a great alternative too
- water - I prefer filtered water to coconut water in this smoothie

Instructions

- Step 1: Combine the ingredients into a blender cup. Blitz until smooth.

- Step 2: Pour into a glass. Garnish with hemp seeds and bee pollen.
Hint: freeze you own blueberries, just wash, dry and lay out on a baking sheet and pop in the freezer. Once frozen, about 1hr, transfer into an airtight container. No waste, just yummy smoothies whenever you want!
Substitutions and Variations
Smoothies are great because you can change up your recipes to suit whatever you have in the kitchen. These are a couple of easy swaps;
- Berries - if you don't like blueberries, use any berry you have, strawberries, raspberries or mixed berries all work well in this recipe
- Nut butter - cashew butter has a light taste, but almond butter or even sunflower seed butter are great alternatives
Equipment

Storage
Smoothies are best enjoyed immediately, as they start to separate. However, you can freeze the smoothie into an ice cube tray, then pop them out, blitz in a Nutri bullet and consume.
