Peach and Halloumi Salad

The sweet and salty combination of this dish makes this peach and halloumi salad so addictive. We all need a good salad or two in summer to serve at barbeques and this is an unexpected and delicious salad your people will love!

I love the summer heat, but when its too hot to get stuck in the kitchen too long, I make a couple of salads that act as main meals, and this salad plays that role beautifully. The meatiness of the halloumi and the crisp sweet peaches are surprisingly filling. Try this addictive salad, you'll make it all summer long.

Ingredients

  • halloumi cheese - this cheese is great for salads as it stays firm, the only downside is halloumi goes rubbery once it cools down, so serve this salad fast!
  • peaches - keep they're shape and firmness, makes them great for mixing into salads. They're sweetness beautifully offsets the saltiness from the halloumi cheese.
  • chives - the light oniony flavour allows the peaches, halloumi and mustard to really sing in this dish.

Instructions

  1. Step 1: Slice the peaches and lay out on a bed of mixed lettuce leaves.

  1. Step 2: Make the salad dressing and set aside.

  1. Step 3: Cook the halloumi cheese in a hot pan.

  1. Step 4: Scatter the halloumi cheese over the peaches and lettuce, pour over dressing and chopped chives.

Hint: heat the stainless pan before add the halloumi cheese. As you'll need a little oil, pat the halloumi dry and drizzle with oil before adding to the pan.

Substitutions and Variations

  • Lettuce varieties - you can use any lettuce you have. Iceberg and romaine and nice and crunchy. Any lettuce will do, use what you enjoy eating.
  • Cheese - the texture is going to be different, but feta cheese in lieu of cooked halloumi is great.
  • Vegetarian - the beef hamburger can be replaced with a plant-based burger to make this vegetarian

Equipment

I am always on the hunt for massive salad serving bowls, the bigger the better! Whether serving a large crowd or the family, I just LOVE the look of great salads in oversized serving dishes. If you're like me, here is one that is on my wish list!

Storage

The salad dressing can be made a head of time and lasts in the fridge for 2-3 days in a jar or airtight container. Mix well before using.

Peach and Halloumi Salad

Servings: 4

Ingredients

  • 1 medium peach, sliced
  • 180 g halloumi cheese
  • 100 g lettuce
  • 1 handful chives, roughly chopped

Honey Mustard Dressing

  • 2 tablespoon seeded mustard
  • 2 tablespoon honey
  • ¼ C lemon juice (approximately 1 lemon)
  • ¼ C olive oil
  • ¼ teaspoon sea salt
  • pinch pepper

Instructions

  • Place the washed and gently dried lettuce leaves in a large serving bowl.
  • Slice the peach and scatter over the top of the lettuce leaves.
  • To make the dressing, combine all the ingredients in a jar and give it a good shake, or whisk together in a small bowl.
  • Cut the halloumi in strips and then cut the strips in half to make smaller more bite size pieces. In a hot pan, add a little olive oil(unless using a non stick pan), then add the halloumi. Cook for a couple of minutes on each side or until golden on both sides.
  • Finally, scatter the halloumi over the lettuce and peaches, drizzle the dressing all over the salad and give it a gently mix. Sprinkle with chives and serve immediately. Enjoy!
