Peach and Halloumi Salad

Ingredients
  

  • 1 medium peach, sliced
  • 180 g halloumi cheese
  • 100 g lettuce
  • 1 handful chives, roughly chopped
Honey Mustard Dressing
  • 2 tablespoon seeded mustard
  • 2 tablespoon honey
  • ¼ C lemon juice (approximately 1 lemon)
  • ¼ C olive oil
  • ¼ teaspoon sea salt
  • pinch pepper

Method
 

  1. Place the washed and gently dried lettuce leaves in a large serving bowl.
  2. Slice the peach and scatter over the top of the lettuce leaves.
  3. To make the dressing, combine all the ingredients in a jar and give it a good shake, or whisk together in a small bowl.
  4. Cut the halloumi in strips and then cut the strips in half to make smaller more bite size pieces. In a hot pan, add a little olive oil(unless using a non stick pan), then add the halloumi. Cook for a couple of minutes on each side or until golden on both sides.
  5. Finally, scatter the halloumi over the lettuce and peaches, drizzle the dressing all over the salad and give it a gently mix. Sprinkle with chives and serve immediately. Enjoy!
