We all love a good smoothie in my house. They're quick and easy and always so delicious. This pina colada smoothie ticks all the boxes and is especially delicious on those warm summer mornings when you need a cold drink to start your day and an iced coffee just ain't it! This also makes the perfect summer time smoothie after school.
I love to keep frozen fruit in the freezer, either store bought, or frozen myself, to pop into a smoothie or dessert anytime. Pineapple is one of those tropical fruits we don't always have access to, so keeping pineapple chunks frozen is always a good idea!
Frozen coconut chunks is a new supermarket find I love! I don't have the patience for chopping up my own coconut, and again, its not always accessible in Victoria. So this is a great way to eat delicious coconut, without the fuss.
Pineapple, like most fruit, is great for antioxiants and helps reduce inflammation. Pineapple in particular contains the compound bromelain which also helps with indigestion and bloating. I love juicey pineapple in summer with greek yoghurt and honey.

Ingredients

- pineapple - fresh or frozen is fine, both are great. I prefer to use frozen pinapple as its easily stashed in the freezer and makes the smoothie icey cold.
- coconut chunks - available in the freezer section of your local supermarket, adds a little texture but also helps keep you feeling full for longer, so its great when you don't have time for breakfast but need something satisfying.
- coconut milk - love the creaminess the coconut milk adds to the smoothie.
- orange juice - don't freak out that the orange juice and coconut milk is going to taste weird, as the ratio keeps the smoothie tasting creamy with just a hint of orange juice in the background.

Instructions

- Step 1: Combine all ingredients into a blender and blitz until smooth.

- Step 2: Pour into a tall glass and enjoy!
Hint: freeze excess coconut milk and add that into the next pina colada smoothie you make. Or cover it and pop into the fridge for the following day.
Substitutions & Variations
This easy recipe is also vegetarian and vegan friendly, but there are a couple of additions and swaps you can make to suit your needs;
- Sweetness - if you like the smoothie very sweet, add some honey or simple syrup before blending
- Extra fruit - this will completely change the smoothie to a tropical smoothie, but add banana, mango, kiwi fruit or oranges if you need to use the fruit, we dont want to waste anything!
- Milk - if coconut milk isn't your thing, you can use coconut water and add a few splashes of milk of your choice, but it will taste less tropical
- Add alcohol - of course, being a pina colada smoothie, you can aboslutly make an adult version and add a 30ml shot of rum of your choice! Delish!
Equipment
Every working kitchen needs a blender, and this little guy is my favourite, especially for whipping up some smoothies. Of course, the big blenders are great and can make larger batches of smoothies at a time and a large blender is stronger and blends frozen fruit much quicker and easier, so get whatever works best for you and your family.
Storage
The frozen ingredients can be stored in the freezer for as long as the packet says so. But once the pina colada smoothie is made, it needs to be served and consumed immediately, as it can seperate.
Top Tip
To keep the smoothie cold on a warm day, add ice cubes to each glass just before serving. The movement from the ice cubes will also keep the smoothie from seperating too quickly.
If you find the smoothie is a little too thick for your liking, add a splash of water to the blender to adjust to a thinner consistency.
