Chimichurri

This classic Argentinian sauce is delicious! Chimichurri adds so much flavour to any grilled meat or roasted vegetables. The spice and pungent garlic have such a kick, its so addictive! This is such an easy recipe to make too, lifting you dinner time game in no time.

Ingredients

  • chilli - every chimichurri needs chilli. I always prefer fresh chilli for this recipe, but dried chilli flakes are still ok, if you need.
  • garlic - nothing is quite as pungent and punchy as garlic, but its so delicious in the sauce.
  • parsley - the addition of parsley balances out the big flavours of chilli and garlic

Instructions

Step 1: Finely chop parsley, chillies and garlic and place in a small bowl.

Step 2: Add remaining ingredients and combine well. Allow to sit for at least 15 minutes before serving.

Hint: make this chimichurri in advance, especially if catering for a large group. The longer the ingredients sit together, the greater the flavour.

Substitutions

Making too many substitutions to this recipe would ruin it. Here are a couple that maintain a lovely balance of flavour;

  • Lemon juice - instead of red wine vinegar use lemon juice. Never use white vinegar or white wine vinegar.
  • Chilli flakes - use dried chilli flakes instead of fresh

Storage

Store in an airtight container in the refrigerator for up to 24hrs.

Top Tip

Please don't use a food processor to chop the parsley or in any way to make this sauce. The food processor quickly turns things into a paste, this needs to be light with floating pieces of flavour.

Chimichurri

Ingredients

  • ½ C parsley
  • 2 small chillies
  • 3 cloves garlic
  • ½ C olive oil
  • 2 tablespoon red wine vinegar
  • ½ teaspoon pepper
  • pinch dried oregano
  • 1 teaspoon sea salt

Instructions

  • Finely chop the parsley, chillies (remove seeds) and garlic and place in a medium bowl.
  • Add remaining ingredients into the bowl and combine.
  • Allow to sit for a minimum 15 minutes before serving. Best served after 2hrs. Enjoy!
