Smashed Potatoes

Elevating a traditional potato salad for the summer. This delicious smashed potato recipe is quick and easy
Servings: 6 people

Ingredients
  

  • 200 g bacon, chopped
  • 1 bunch spring onions, chopped
  • 2 kg small potatoes
  • 3-4 tablespoon olive oil
  • 2 teaspoon sea salt
  • 1 teaspoon pepper
Dressing
  • 1 ½ C Greek yoghurt
  • 4 tablespoon seeded mustard
  • 2 tablespoon honey
  • 2 tablespoon white wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt

Method
 

  1. Preheat oven to 200℃. On a lined baking tray, roast the bacon and half of the spring onion until lightly golden and crispy. Then remove from oven and set aside.
  2. Wash and boil the potatoes of salty water. Once just tender, strain, put into a roasting dish and smash using a potato masher or cup. Coat with olive oil and sprinkle on salt and pepper. Bake until golden and crispy.
  3. In a medium bowl, whisk together all of the dressing ingredients and set aside.
  4. To serve, spread some of the dressing on the platter, top with potatoes, more dressing then the cooked bacon and spring onion. Top with the remaining dollop of dressing and scatter with the fresh spring onions. Enjoy!
