Quick Pickle Red Onion

Ingredients
  

  • 1 large red onion, thinly sliced
  • 2 tablespoon red wine vinegar
  • 1 teaspoon sea salt
  • 1 teaspoon caster sugar
  • ½ teaspoon peppercorns
  • ¼ teaspoon mustard seeds
  • 1 C hot water

Method
 

  1. Ina clean jar or small bowl, place the sliced red onion, sea salt, sugar, peppercorns, mustard seeds and red wine vinegar. Give it a little stir.
  2. Pour hot water over the top, to fill the jar or bowl ( this amount will vary but should be more than 1 cup.
  3. Allow to steep for at least 15 minutes before consuming. Enjoy!
