Cucumber and Feta Salad

A deliciously satisfying salad that adds freshness to any meal.
Servings: 4 people

Ingredients
  

  • 2 C risoni pasta, cooked and cooled
  • 1 large cucumber, roughly chopped
  • 2-3 spring onions, thinly sliced
  • ½ bunch parsley, roughly chopped
  • 150 g feta cheese, crumbled
  • ¼ C walnuts, roughly chopped
Garlic Vinaigrette
  • 1 clove garlic, minced
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey
  • 3 tablespoon red wine vinager
  • ½ teaspoon sea salt
  • ¼ teaspoon pepper
  • 4 tablespoon olive oil

Method
 

  1. Cook the pasta as per the packet instructions, then strain and cool under cold running water. Chop the remaining salad ingredients, crumble the feta and combine all the salad ingredients in a large bowl.
  2. Make the vinaigrette and pour over the salad. Allow to sit for 5 minutes before serving, so all the flavours can come together. Enjoy!
