Candied Walnuts

A sweet and salty snack that's delicious with a cold drink before dinner or scattered over salads and vegetable dishes for dinner.

Ingredients
  

  • 2 C raw walnuts
  • ½ C caster sugar
  • ½ C brown sugar
  • 2 tablespoon water
  • 1 ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Method
 

  1. Place the raw walnuts on a lined baking tray and bake in a preheated oven for no longer than 10 minutes. Then remove the tray from the oven.
  2. In a medium saucepan, place the caster sugar, brown sugar and water over low heat and gently stir as the sugar dissolves.
  3. Once the sugar has dissolved, add the cinnamon, vanilla extract and salt and stir to combine. Keep on the heat for 1 minute, then remove the saucepan from the stove.
  4. Put the lightly toasted walnuts into the saucepan and stir quickly to coat the walnuts. Once coated, quickly pour the walnuts onto the same lined baking tray and spread them out evenly using a spoon or wooden spoon. Allow to cool, the candy will harden quickly as the walnuts cool. Enjoy!
