Banana Bread

Ingredients
  

  • ¼ C milk
  • C extra virgin olive oil
  • 7 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 C ripe bananas, (approx. 2 bananas)
  • 2 C plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon bi carb soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ½ C dark chocolate chips

Method
 

  1. Preheat oven to 180℃. Line a loaf tin with baking paper and set aside.
  2. In a food processor, blitz together the wet ingredients, milk, maple syrup, olive oil, vanilla extract and bananas and pulse until the mixture is smooth.
  3. In a medium mixing bowl, whisk together all the dry ingredients, flour, baking powder, bicarb soda, cinnamon, chocolate chips and salt. Now pour the mixture from the food processor and gently mix everything together to form the batter.
  4. Pour into the prepared tin and bake for 40-50 minutes on the middle rack.  Cjheck the loaf with a skewer or toothpick. Once cooked through, remove from the oven and allow to cool in the tin for 10 minutes before transferring to a cooling rack. Enjoy!
